WINEMAKING
Sanctuary West Side Red is a blend of great varieties grown by some of our favorite Paso Robles vineyards. The juice is fermented with selected yeast and undergoes prolonged skin contact to soften tannins and to increase concentration. The wine is pressed into French barrels to complete 100% malolactic fermentation and continues barrel aging for a total of 16 months until bottling.
PROFILE
Aroma: raspberry jam, red licorice, and black cherries, with floral and sweet spice notes
Mouthfeel: round and soft palate with a very juicy finish
Flavors: red berries jam, black cherries and a subtle toasty note
